PRIME RIB ROAST (for Medium Rare)

From the Kitchen of Bill Motz

Bring roast to room temperature (takes about 2 hours)
1/2 cup chilli sauce (Heinz)
1 tbsp. Worchestershire Sauce
1/2 tsp. salt, or to taste
1/4 tsp. freshly ground pepper
1 tbsp. A-1 Sauce (optional)
The Steps:
1. Preheat oven to 500 degrees
2. Season with Chili Sauce Mixture
3. Place roast in pan - fat side up and roast 18 minutes per rib
2 ribs - 36 minutes
3 ribs - 54 minutes
4 ribs - 1 hour and 12 minutes
etc.
At the end of time, turn oven off immediately and do not open oven door for 2 hours. After that, roast is done. For dinner at 5:30pm, put roast in oven at 2:18pm and turn oven off at 3:30pm for 4 ribs.

Use 1 can of Beef Broth for au jus.

Horse Radish

1 large tbsp. horseradish
1/2 cup sour cream
3 tbsp. Mayo
Dash of Worchester Sauce
